Dry-hopping during primary will render the yeast useless for repitching. 3) 5 Day Maximum If you choose to do primary hopping, take the beer off the hops and yeast no more than five days after primary is done. Secondary hopping is the best for yeast cropping and for the elimination of diacetyl. Dry-Hopping Tips Tips 1) 60°F OR HIGHER Fruity, tropical, and citrus notes 2) 50°F - 60°F Provide a balance bringing out some of the fruity and citrus notes while simultaneously bringing in some of the grassy and woody notes from the hops. 3) BELOW 50°F The hop flavors you will obtain will be more grassy, woody, or vegetal than the warmer temperature dry hop temperatures. Beers which are packaged with high levels of dissolved oxygen, or lower levels of oxygen kept in warm conditions will cause the beer to stale and generate off flavors faster than if they are kept cold. Always store beers cold, especially if they are hoppy! You can dry-hop in a keg to avoid oxidation. Hop Storage Hop Storage Where pellets may lose to leaf in aroma, pellets win in their storage capacity and storability. Pellets should be stored very cold and vacuum sealed. Pellets are much denser than leaf hops, so they will take up less freezer space. Stored properly, pellets’ flavor and aroma stand up much better than leaf in the long run.
