- This is also called self service and is normally used in
banquet functions and in some restaurants. Food is attractively arranged on a long table, classified and arranged according to proper sequence, from appetizers to desserts. Soup is placed on a soup tureen and the hot entrees in chaffing dishes to keep them warm. Some equipment like dinner plates and saucers are laid
down right on the buffet table. Instead of the waiter serving the guests, the guests go to the buffet table pick up plates, china,cuttery and napkin and all other items and serve themselves oftheir own choice.

Design total buffet concept, food items and display as required, in consultation with customers and other relevant people. The total buffet concept includes as required:
selection of appropriate food and food items
table arrangements
service equipment
service ware
linen
decorations
candles and lighting
centrepieces.
Plan buffets according to required theme or occasion, in consultation with customers and other relevant people.
Select and organize an appropriate range and quantity of food items with consideration given to quality and price, related to enterprise and customer requirements.

1) Plan and design a buffet
2) Prepare for the buffet

Select appropriate service equipment, serviceware and linen to display food and decorations.
Plan and arrange tables and service points so that they are suitable for buffet display and service according to establishment requirements, occasion and efficient and safe customer and staff accessibility.
Prepare or organize food presentation with artistic flair and according to establishment standards and customer requirements.
Select, and prepare or organize appropriate and attractive decorations and centrepieces as required.
Liaise with relevant people to organize preparation and conduct of buffets where required.

3) Display Food Items

Display food items with a sense of artistry to create customer appeal.
Use garnishes and accompaniments to enhance taste and appeal.
Supervise buffet service to ensure that food items are replenished, and that the total display remains neat and attractive.

4) Present buffet in a safe and hygienic manner
Identify potential health problems through cross-contamination and food spoilage and take appropriate preventative measures to eliminate these risks.
Keep food on display at temperature levels as prescribed by legislation
Advantages of Buffet Table Service
1. It is a fast service.
2. It requires less staff to render the service needed.
3. The presentation of the different dishes can be appetizing.

Disadvantages of Buffet Table Service
1. It may result in shortage of food especially when the early
ones may serve themselves more; thus very little food is left
for the latecomers.
