00:00 - 00:01
what's up friendly?
00:01 - 00:03
It's patrick of the food safety recap video from today's
00:04 - 00:05
visit a couple of things.
00:05 - 00:08
First of all, you guys increase a ton from last
00:08 - 00:10
month, score 30 points, which is a huge jump.
00:10 - 00:11
So great work on that.
00:12 - 00:15
Um wanted to go over just a few of the
00:15 - 00:15
major findings.
00:16 - 00:21
Um, the top three so cooling, there was a tray
00:21 - 00:24
of cool down chicken at room temperature.
00:25 - 00:27
It was like 90 degrees, most of it was 80
00:28 - 00:31
90 degrees and it had been labeled for an hour
00:31 - 00:33
and a half prior to when I found it.
00:33 - 00:35
Um So we also need to have a timer running
00:35 - 00:37
if we're gonna, if we're gonna cool that way, we
00:38 - 00:39
need to have a timer running so that we move
00:39 - 00:42
that product back to the walk in cooler after an
00:42 - 00:44
hour. So it doesn't stay to one for too long
00:44 - 00:46
Because at that, you know, hour and a half point
00:47 - 00:49
you're starting to really, you're starting really rub up against
00:49 - 00:53
that 70° within two hours um parameter.
00:53 - 00:56
Uh The other thing that cooling was remain so remain
00:56 - 00:59
was 46 degrees after four hours in the walk in
00:59 - 01:02
cooler. Uh So really calibrate this is these are the
01:02 - 01:02
hottest months of the year.
01:03 - 01:06
Obviously. Um Your tap water that uses that is used
01:07 - 01:08
to mix your produce wash is the hottest.
01:09 - 01:09
That will be all year.
01:10 - 01:12
And so teams really you have to calibrate to make
01:13 - 01:16
sure that they are mixing enough ice in the ice
01:16 - 01:19
bath to make sure that that stuff gets down to
01:19 - 01:23
temp quickly after it's been in that hot produce wash.
01:24 - 01:27
Um Then the next thing so hot holding.
01:27 - 01:28
Uh This was minor.
01:28 - 01:30
There wasn't a ton of this but there was some
01:30 - 01:34
single use uh mac and cheese cups in the warming
01:34 - 01:38
drawers that were not the warming drawers but the where
01:38 - 01:39
the marco unit.
01:39 - 01:43
Um And they were under 140°. So there's really no
01:43 - 01:47
no procedural uh no procedures that allow for single use
01:48 - 01:50
items to be made and then put back into a
01:50 - 01:52
warmer to be hot held until serve.
01:53 - 01:54
Um So we want to make sure that we're watching
01:55 - 01:57
that and making sure that we're kind of uh you
01:57 - 01:59
know breaking those habits if that's a lot of stores
02:00 - 02:01
will do that to try to make it faster or
02:01 - 02:02
more operationally easy.
02:03 - 02:05
But it can lead to mainly lead to quality issues.
02:06 - 02:08
It is a safety issue on an audit but it's
02:08 - 02:09
more of a quality issue.
02:09 - 02:12
Um And then the next thing was cold holding so
02:12 - 02:17
on the cold rail um There were Uh Cheese was
02:17 - 02:18
45 44.
02:19 - 02:21
And tomatoes were 45 as well.
02:21 - 02:22
And they were cut earlier this morning.
02:23 - 02:26
So um Monday I understand that you don't have a
02:26 - 02:28
lot of produce that, you know, you've you've prepped the
02:28 - 02:30
night before that you can use that morning that's been
02:31 - 02:31
pulled down.
02:32 - 02:34
Um But you just wanna make sure I send those
02:34 - 02:37
tomatoes and and cutting small amounts at room temperature um
02:38 - 02:39
so that they don't get up too hot.
02:40 - 02:42
But look look very good uh much better.
02:43 - 02:45
Um So I'll be in touch with you guys next
02:46 - 02:47
month and and walk around with some of the leaders
02:48 - 02:48
at L.
02:48 - 02:51
A. And I talked about today um Looking forward to
02:51 - 02:52
that and let me know if you have any questions
02:53 - 02:53
about anything.
02:53 - 02:55
In the meantime, I look forward to seeing you.
02:55 - 02:55
Thanks.
