goes back to the Spanish colonial era in the 16th century
Franciscan and Dominican monks planted orchards of European fruits
pears,peaches, plums, apples
they boiled fruit with sugar so fruit wouldn't spoil
stirred in large copper pots until it became a paste consistency
sweet and spicy
very different from American candy
chewing gum, Mexican milk candy, chocolate candies, and gummy candies, Mexican candy recipes, which appeal to every taste and type of sweet tooth

Most Popular Candies in Mexico
1. Alegrías: These are a staple in Mexico as they’ve been prepared since the pre-Columbian era. Alegrías are made with amaranth seeds that are mixed with piloncillo syrup and honey
piloncillo-brown sugar but in a solid form
2. Fruta Cristalizada: Chunks of pumpkin and sweet potato cured with lime and later cooked with piloncillo, which results in a firm yet soft candy
3. Cocadas: Cocadas are a sweet and soft treat with subtle flavor made with shredded coconut.
4. Tamarind with Chile: This is a tamarind paste made with sugar syrup and mixed with chili pepper powder, and making a sour taste
5. Sugar skulls: Used for the months of October and November.They are made of sugar paste, put into skull molds and then is decorated with vibrant colors
