¡Que Vivan Los Tamales! Chapter 1 Women were the centers of the household and the livelihood of the familyThey made tortillas using a cazuella, a metate, and a comal. Chapter 2 -Mole Pablano (the Mexican national dish) blended together the cultures of Native Americans and Europeans.


-Mexicans refused to grow wheat farms because it was difficult to grow and they preferred the taste of corn to wheat.

2. The cooker would kneel down and ground the wet corn on the metate (a grinding stone).
3. Once a smooth dough, it was pat into thin disks and cooked for a short amount of time over the comal, (a griddle). What do you think was the main diet of the Native Americans? Did You Know? Festivals helped spread diverse traditions
and popular cuisine to different regions. Tortilla’s were used in place of plates and utensils,
you could store your food in them,
making it extremely useful come dinner time. -Elites launched campaigns against corn, saying it was not as civilized.
-Wheat was susceptible to disease and whenever the Spanish people weren’t looking, they would turn the wheat fields into corn fields. Fun Fact: Making the tortillas was similar to fertility because bakers would name their creations sexual names. Foods gained acceptance only when they appeared to be Creole adaptations of Spanish dishes.

Europeans did not like chili peppers because they were thought to be uncivilized. Leaders would fashion patriotic celebrations and monuments to incorporate the lower classes into the Mexican nation, but it resulted in no success.
The leaders also tried to educate the lower class to encourage national pride, but it was unsuccessful until later years during the 1940s. Europeans who ate tamales and enchiladas were considered going against the ideas of European culture The lower class women and peasants would set up small restaurants to sell tamales which the Europeans looked down on. This led to diseases being spread. Senator Francisco Bulnes introduced a book stating that wheat is nutritionally superior. Eventually, it was discovered by scientists that corn was equally nutritional to wheat. Quotes: “Formulations of the tortilla discourse revealed a profound ignorance about the variety of Mexican rural life, nevertheless, they drew upon a genuine association between corn and identity.” “The tortilla discourse attempted not so much to eliminate maize from middle-class diets as to spread a taste for wheat among working-class consumers.” Women wanted a mechanical mill for tortilla making that wasn’t so arduous to operate Mexican Engineers began inventing corn mills and tortilla machines More input than output Julian Gonzalez designed the first mechanical tortilla maker. Don Luis Romero Soto designed an improved model in 1899 and he created the first tortilla factory. In 1975, tortilla flour was being processed at 500,000 tons. Women grew accustom to using these new tortilla mills known as nixtamals that they only reverted back to the old metate mill on special family occasions. The marianismo was the most important, for it challenged the men’s control of the public sphere, by implying that the females duty of nurturing the nation should justify their political participation Post-National Cuisine In modern times, standardization of the food industry is bringing about the decline of ethnic and regional foods.

The diversity of corn will be lost unless it is continually planted and cooked often.

The Mexican cuisine will not be reduced to simply the Taco Bell menu, so long as the ethnically unique cuisines are cooked. We Have Questions for You.... Do you think it was reasonable to make a big deal about the Mexican national dish?

This cookbook was directed at the middle class families and was based on religious and family traditions. The Economy was growing by 6 percent annually. This caused a higher diversification of cookbooks Mexico started losing tradition and opening up chains that catered mostly to upper-class families. Foreign recipes started dominating cookbooks. Folklolrists started to collect oral traditions before they disappeared by mass media and replaced with packaged food The Miracles End Mexicans hoped to show the world their great economic development during 1968s Olympic Games, but instead they revealed the failure of their "miracle" At the end of the miracle, on September 19, 1968 Josefina Velazquez de Leon died. Question: And in 1985 an Earthquake devastated Mexico City. What was one of the first projects started to aid the earthquake victims?
