Local Cuisine
Mexican cuisine is a fusion of indigenous Mesoamerican cooking and European (mainly spanish) elements that were added after the Spanish conquest of the Aztec Empire. Some staple foods used in the cooking are corn, beans, avocados, tomatoes, chili peppers, and rice. Three of the most popular dishes in Mexico are:
- Tacos al pastor
- Mole
- Tamales
History of Cooking
Back in about 7000 BCE, indigenous people of Mexico hunted animals and gathered plants for cooking. In 1200 BCE, corn was domesticated and soften to grind to create tortillas, this process was called nixtamalization. After the Conquest, the Spanish introduced lots of new cooking techniques to the Mexicans. Then again in the 19th century Mexico received lots of new immigrants, French, Lebanese, German, Chinese, and Italian. French food became very popular with the upper class people.
Tortilla Press
Comal
If you don't own a comal you can't even consider yourself Mexican. A comal is used to warm up tortillas. It provides enough space to put about 4 corn tortillas. Which makes the process faster since there's usually lots of tortillas needed for big Mexican families.
El Cardenal
A restaurant in Mexico that serves traditional Mexican food such as shrimp tacos, chile relleno and escamoles. The restaurant was founded in 1969 by a married couple with 7 kids. At first it was a small business trying to support the family and then it turned in to and outstanding restaurant.

Having a tortilla press is essential in a Mexican house hold. Sure you can go out and buy tortillas, but everyone knows that the best are homemade. This piece of equipment helps you get the perfect thickness. Just put a small ball of dough in and press down as much as you can.
