History of Hotel and Restaurant Management

Greco-Roman culture hospitals for recuperation and rest were built at thermal baths.

The precursor to the modern hotel was the inn of medieval Europe, possibly dating back to the rule of Ancient Rome. These would provide for the needs of travelers, including food and lodging, stabling and fodder for the traveler's horse(s) and fresh horses for the mail coach. Famous London examples of inns include the George and the Tabard. A typical layout of an inn had an inner court with bedrooms on the two sides, with the kitchen and parlour at the front and the stables at the back.

In Ancient Greece and Ancient Rome, thermopolia (singular thermopolium) were small restaurant-bars that offered food and drinks to customers.

In Pompeii, 158 thermopolia with a service counter have been identified across the whole town area. They were concentrated along the main axis of the town and the public spaces where they were frequented by the locals.

Considering Millennials have no problems speaking up, if what they are seeking is not quick enough, they will turn to Twitter, Facebook, Yelp or TripAdvisor to voice their complaints.

With a growing culture of foodies, guests are focusing on the quality of food available while traveling. There is a growing demand for healthy, natural and locally sourced options while on the road.

Smart phones represent 50 percent of new mobile devices being purchased and the growth of connected devices will only continue to rise.
