If it's expository you can write down verse by verse everything they say about that verse
If it's topical you have to find the outline, or write down the major ideas
If it's outlined it's much easier

Freeform you just have to figure out
Some preachers are very good to take notes to
Other are not as good
This isn't saying that one is better then others
Are you ever going to go back and look at them?
Are you going to try to use them as sermon ideas for yourself?
Do you even keep the sheet you write notes on?
Want to save them:
Keep the date, and who preaches them
Write down the verse and what context the preacher says them in
Find a way to be consistant
Bring a notebook or something similar
Don't want to save them:
Write things to help youself remember the general ideas
Still keep a notebook
Write verses that stand out
Neither is better then the other
See what I did there
Don't try to write everything down
Don't prioritize good notes over hearing God's Word
Look for the "Golden Bullet"
Know why you're doing it and cater to that purpose
