His origins

The history of this dish dates back to the arrival of Chinese immigrants -called coolies- to Peru at the end of the 19th century. They were workers who used to do all kinds of tasks in the coastal farms. Later, and after leaving these jobs, they began to open small restaurants.

As part of the payment for their working days, they received a daily ration of rice mixed with spices. The use of this input and others brought from the eastern country, with the culture they had of taking advantage of the food left over from the previous day, helped to create an original dish that used techniques of cooking in a frying pan.

Ingredients

-4 eggs

-1 chicken breast

-1 package of hot dog

-2 tablespoons chopped ginger

-2 teaspoons minced garlic

-½ cup of chopped red pepper

-4 cups of rice

-½ soy sauce

-¼ cup sesame oil

-1 cup of chopped green onion

Preparation

-Clean the chicken well and cut it into squares.

-Peel and grate the ginger, set aside. Wash and chop the red pepper plus the green onion

-Shake the eggs in a bowl or directly in a pan.

-In two more tablespoons of oil, add the grated ginger and the chopped chicken. Fresh sausage can be added in small pieces and works great too.

-Fry the meat until it begins to brown.

-Add 2 tablespoons of oil, add the pepper and green onion.

-On strong fire; Stir-fry without stopping, until the vegetables are toasted. Add the cooked rice along with the soy sauce.

-Add the eggs and integrate with the rest of the ingredients. Serve it very hot.
