Food for thought
The dish I have created is inspired by a few different Lebanese foods such as Kofta, Tabouli, and the garlic dip.
The tabouli is served in a lettuce leaf which is being used kind of like a cup or small bowl. On the side we have lebanese bread that is cut up into quarters, kofta on mini skewers, and some garlic dip.

My dish would make a good canteen product for several reasons such as:
- It is quick and easy to make
- It tastes and looks appealing
- It is not too expensive like most healthy meals
- These things are very convenient for customers and it also helps prevent obesity

Unlike most healthy meals, my dish would not be too expensive considering all the things in it.
(Tabouli, lettuce, kofta, garlic, and lebanese bread.)
It also takes almost as much preparation as it does cooking because you have to put the meat on skewers and cut up lots of vegetables (parsley, tomatoes, etc.) There are also things such as the lebanese peppers, wheat, lemon juice, oil and some other things that need to be added in order to give it a finishing touch.
I think a suitable cost would be between:

Kofta and Tabouli Salad
RECIPE
1. Put kofta on skewers and grill on Medium heat (or use hotplate). Turn every now and then so they are cooked all around.
2. Dice tomatoes (keep seperate) and sprinkle 2 tablespoons of fine wheat over tomatoes. Mix so wheat can absorb tomato juice.
3.Chop parsley leaves and put in bowl.
4. Chop onions and add them to bowl- don’t mix yet.
5. Juice lemons using a lemon juicer
6. Add tomato mixture to bowl
7. Drizzle with olive oil and pour in the lemon juice and sprinkle with salt and lebanese peppers to taste
8. Remove kofta from grill and cut up into small pieces
9. Put tabouli in lettuce cups and put kofta on top/side
10. Serve with garlic and lebanese bread
Factors Affecting Design
My meal has many factors affecting design such as:
Aesthetics: It looks, smells, and tastes pleasing
Scale: It is a good portion size for a meal
Cost: It would not be a very expensive meal making it more convenient for the buyer
Safety: It is a safe and healthy dish (Assuming the customer does not have allergies to things such as the tomato). It does not have anything too unhealthy in it except the lebanese bread which contains carbs,
but the meat (kofta) and the salad is healthy as well.
