The paiche feeds, mainly, on live fish and in culture conditions it accepts balanced food. Its meat has a yield of 57% fillet, it lacks intermuscular bones, has a good texture, is white in color and has a pleasant flavor, so it has great potential to obtain products with added value. Due to the aforementioned characteristics, this important species is undergoing intense capture in its natural environment, which has resulted in a drastic decrease in its populations.

Classification
In Peru it is known by the common name of paiche; in Brazil its most widespread name is pirarucú, due to its reddish coloration; in Guyana it is called “arapaima”, probably from the original name “warapaima”. The genericname has been taken from the vernacular "arapaima" and the specific "gigas", which means giant, alluding to its large size.
