We are not talking about any book, we are talking about one book in particular.

We cannot omit the relative pronoun because it is the SUBJECT of the clause.

Whose: possession
Where: place
When: time
The give non essential, extra information.
We use commas to separate non-defining relative clauses from the rest of the sentences

The non-defining relative clause gives extra information.
We could miss out the relative clause and the meaning would still be clear.
We cannot leave out the relative pronoun in non-defining relative clauses
The hotel, which was a hundred years old, was very comfortable.
