Kalua pig:The main dish served at luaus is called Kalua pig. This invloves cooking a hole pig in an underground oven called an imu. The imu is usually about 6 feet long 4 feet wide and 3 feet deep. Rocks are put on top of a wood fire at the bottom of the pit to retain heat, when the fire goes out and the rocks have reached cooking temp the entire pit is lined in heavy leaves, and the meat is salted and stuffed with more of the hot rocks then the pig is put back in and is covered in a wet burlap sack and left in the pit to cook for about 6 to 8 hours.
Haupia: This dish is eaten after the main course at a luau. It is a traditional cocconut milk based dessert. It is technically a cocconut milk pudding and is only eaten at gatherings such as a luau, and when properly made ressembles what we know as gelatin.
