Why does this happen?

Why would people pour vinegar into milk?

they use it for making a substitute for buttermilk for cooking.

This happens because a chemical reaction happens when the vinegar is poured into the milk. Milk is made out of proteins and fats, when the vinegar mixes in the fats separate and makes the milk curdle.

When you do pour vinegar into milk it makes the milk curdle and lumpy after a few minutes.
