But what does that actually mean?

In layman's terms Assonance is a literary device in which the same sound of a vowel (pattern) or stressed syllable is stressed or used in a nearby word(s) in a sentence.

In poetry, Assonance is the repetition of the sound of a vowel or diphthong in non rhyming stressed syllables near enough to each other for the echo to be discernible

As you can see, there is a bit more to Assonance than you think.

The vowels create a smooth transition from word to word almost like rhyming, but when using Assonance the words don't have to necessarily rhyme.
