  • Green restaurant association is a national non-profit ogranization that provides a "convenient and cost effective way for resuaruants, manufacturers, distributers, and consumers to become more environmentally responsible"

Green Restaurant Certification

  • Green Restaurant 4.0 provides a comprehensive method of rewarding existing restaurants, foodservice operations, new builds, and events with points in each of the GRA's Seven Environmental Categories
  • 1) Water Efficiency
  • 2) Waste Reduction and Recycling
  • 3) Sustainable Furnishings and Building Materials
  • 4) Sustainable Food
  • 5) Energy
  • 6) Disposables
  • 7) Chemicle and Pollution Reduction

Requirements of Certified Green Restaurants

Must fulfill the following

  • Accumulate a total of 100 points
  • Meet minimum points in each category
  • Have a full-scale recycling program
  • Be free of Polystyrene Foam (aka styrofoam)
  • Yearly Education

Continual Changes:

  • After becoming certified the restaurant must continue to accumulate points. (ex. By the end of the end of year 2, each cgr must meet 110 points)

Water Efficiency

Goal:

  • "to promote water efficiency and conservation in food service facilities"

Categories Points are Awarded to:

  • Landscaping
  • Kitchen
  • Restrooms
  • Other (washing machines, greywater, irrigation, and plumbing, ect.

Waste Reduction and Recycling

Goal:

  • "to encourage foodservice facilities to move toward the goal of becoming zero-waste, through reducing waste output, increasing stock of resusable items, and recycling and composting what is left"

Categories Points are Awarded to:

  • Recycling and Composting
  • Construction Recycling
  • Waste Reduction - Office Products
  • Waste Reduction - Disposable Products
  • Waste Reduction - Food

Sustainable Furnishings & Building Material

Goal:

  • "to encourage foodservice facilities, especially those that are new-builds, to make environmentally responsible purchasing decisions when considering furnishings and building materials"

Points Awarded for Salvaged Material, Rapidly Renewable Materials, FSC Certified Wood, and Reused Material

Sustainable Food

Goal:

  • "to mitigate many of the detrimental effects of factory farming, meat production, pesticide use, fishery depletion, and transporting food, and moving forward in supporting sustainable, organic and local family farms"

Categories Points are Awarded to:

  • Organic Food & Beverage and Sustainable Seafood
  • Meat and Dairy
  • Meat-Free
  • Local

Energy

Goal:

  • "to encourage foodservice facilities to move toward the goal of becoming carbon-neutral using only sustainable sources of energy"

  • Heating, Cooling, Ventilation
