CAROLING
Once Simbang Gabi starts, carolers get on their feet and go house to house spreading the spirit of Christmas
Jingle Bells, Silent Night, and traditional Filipino songs (Ang Pasko Ay Sumapit, Pasko Na Naman, and Namamasko)
Handmade musical instruments (ie. tambourine made from bottle capes and drums made from cans and biscuit tins)
Give them some money for their entertainment and they sing to thank you
“Thank you, thank you, ang babait ninyo...thank you…”
Church organizations, clubs, groups of friends, participate in caroling as well
Raise funds through their yearly caroling
May send letters to houses informing households when they will come to sing that way people can get donations ready
NOCHE BUENA \
Celebrated during the day before Christmas (Christmas Eve)
A yuletide feast where family members gather and dine together around midnight
Foods served include: queso de bola, tsokolate, noodles and pasta, fruit salad, pandesal, relleno, and hamon
Most families would also celebrate their yearly reunion since it is is usually the time when everyone in the family is present
Families usually open their presents during Noche Buena
KAKANIN
The tradition of celebrating Christmas in the Philippines comprises different culinary influence from our Spanish and Chinese ancestors
Most significant feature of Christmas cookery is the Kakanin (Rice Desserts yo)
Pinoy favorites are Bibingka (Rice Cake) and Puto Bumbong (Purple Steamed Glutinous Rice)
Bibingka has many different recipes and procedures
Made mainly of glutinous rice powder and coconut milk and topped with salted eggs, cheese, butter, and grated coconut
Puto Bumbong
Grinding an over-night soaked glutinous rice, dried and mixed with other ingredients, then cooked using a bamboo tube steamer

CHRISTMAS IN SEPTEMBER
If there is ever a time that Filipinos don’t run on Filipino time, it’s Christmas.
We are late to everything else, but not Christmas.
In America, people traditionally put up their tree right after Thanksgiving whereas those in Philippines will put up a tree and start counting down as early as SeptemBER.

Also known as “Misas de Aguinaldo”

Traditionally begins on December 16 and ends December 24
In Philippines, it’s usually celebrated at times ranging from 3AM-5AM
It’s said that if you attend all 9 days, you get to make a wish!!!
