Coconut oil was once prevalent in western countries like the United States. With a long shelf
life and a melting point of 76 degrees, coconut oil was a favorite in the baking industry. But
a negative campaign against saturated fats in general, and coconut oil in particular, led to
most food manufacturers abandoning coconut oil in recent years in favor of hydrogenated
polyunsaturated oils that come from the main government-subsidized cash crops in the US,
particularly corn and soy. These hydrogenated oils contain trans fatty acids. The polyunsaturated
oils were not a big part of the diet of previous generations, so how has the health of Americans
changed now that polyunsaturated oils are for the most part all one finds on supermarket shelves

Coconut oil is an edible oil that has been consumed in tropical places for thousands of years.
Studies done on native diets high in coconut oil consumption show that these populations are
generally in good health, and don’t suffer as much from many of the modern diseases of western
nations where coconut oil is seldom consumed anymore.

Dry procedure: The coconut should be well dried under sunshine or special process. Afterwards it should be grated or cut into small pieces of 5 to 10 mm. Put the well dried copra into the inlet of the coconut oil expeller. Turn the crank at 50 - 55 rounds per minute to press the coconut oil out of the outlet.
Wet procedure: Fresh coconut is grated and sundried afterwards to a very dry "saw dust" condition. Bridge formation occurs in the inlet funnel and a small stick should be used to move the material into the inlet of coconut oil press. Turn the crank at 45 - 50 rounds per minute to allow the oil to flow to the oil outlet. The copra oil meal can be used as the animal fodder.
When coconuts are used, it is considerably easy to replace them. Coconut trees can grow in almost any kind of soil even in sandy soils in seashores. More so, they live and bear fruit for up to more than sixty years. It is considered a "three-generation tree" which can support a farmer, his children and his grandchildren. Coconut oil is regarded as renewable resource which can be grown again in contrast to fossil and mineral raw materials such as crude oil, coals, ores, etc. whose occurrence is limited and finite.
Harvesting is either done by groups of contractors who use bamboo poles equipped with knives and cut the ripe fruit bunches from the treetops in order not to damage the trees. Extremely tall trees are harvested by expert workers who carefully climb the trees to retrieve the coconuts.

They maintain soil fertility, weed control and pest control by natural means.
Growers use custom-made compost that meets the specific nutrient needs of coconut palms. Mulch is also used to provide high levels of potassium needed by the trees for fruit production. The mulch contains coconut leaves and fronds.
The fertility of the soil is known by the output of coconuts and therefore monitored for health. An average, healthy coconut palm can produce 75 to 200 nuts per year and live to be up to 100 years old.
