Cycle & Cafeteria Menu

One concept for a cafeteria line would be to display the food in which the customers eat it.

1. apps and drinks

2. entres

3. deserts

Another concept would be to display the cold food first and then the hot food.

Cold meat with a bun followed by a cup of hot soup

Establishments that provide this:

-Cycle menus vary from short periods to long periods of time

-Short cycle menus tend to be designed for food and beverage operations that serve individuals for a short period of time

An example of this would be a hospital

Long cycle menus are used for longer periods of time Individuals who live at a residential facility

A short cycle would be one to two weeks, where as a long cycle would be three to four weeks.

-Schools -Hospitals

-Retirement Homes -Day cares

-Universities

Trends in the Industry

When making a cycle, cafeteria menu, it is important to consider.....

-Food that can be made in big quantities (scrambled eggs, bacon, soup)

- Food that can easily kept warm or served cold (served in large warmers) (cold meat with buns, veggies and dip)

- Have vegetarian options (salad bar, tofu, fruit)

Definition

One trend that is popping up everywhere is having a coffee of the month. Different coffee from all over the world is served for customers to have different coffee experience every month. This concept is similar to a cycle menu because it is also always changing.

Another trend that is popular right now in a cafeteria food setting is "clean eating". This consists of all healthy food or organic food. Cycle menus are also providing a vegetarian option for their meals for people who don't eat meat or who wants a healthier option.

These trends would work well in our area because there are people everywhere who drink coffee. We are also such a multicultural environment that people would enjoy trying something from another country. ie. Cuban coffee, Arabian coffee, Arabian coffee

Cycle menus are defined as a menu that offers different foods everyday and repeats itself after multiple days and/or weeks, and cafeteria menus are defined as a restaurant or dining area where customers are served at a counter and carry their food on trays to tables

Grilled food- chicken, beef

Salad bar-greens, veggies and dressing

Hot bar- pasta, pizza, different meats

Beverages- juice, pop, water, coffee, tea

Desserts- ice cream, cookies, tarts, cake
