The Mayan did practice human sacrifice, but it wasn't a part of every festival. When captives were forced to play a game of ball the Maya team always lost. And so after the game the captive team was sacrificed. Of course they do not practice this today, but they did back then.

The priest would get up on the steps of the pyramid or temple so everybody could see them and then they would rattle things and make a bunch of noise. They all loved making noise at their festivals.
The Maya people did a ritual called bloodletting at every festival. But you did bloodletting at your own will because it was a personal sacrifice. Bloodletting is when the Maya cut themselves so that a drop or two of blood would appear. Then the nobles would take the blood and smear it on some bark, and burn it so their blood would "get to heaven" so the gods know that they are giving sacrifice.
