The Hawaiian sugar industry was the #1 industry in Hawaii for years. The business was bringing people from all around the world. The sugar business changed Hawaii forever.
The sugar industry became the main industry in Hawaii when Queen Liliuokalani was overthrown and imprisoned in her own home because Hawaii was annexed by the U.S. and they forced her to sign the bayonet constitution, but she refused to sign it. The bayonet constitution was a legal form saying that taxes should be changed and that the sugarcane industry should take over Hawaii with the sugar cane being shipped for free.

Alexander and Baldwin has been on the sugarcane plantation in Maui until they announced that they were going out of the sugar business in early 2016.

Sugarcane can be harvested by hand cutting. Upon arriving at a mill, it is first cleaned of dirt and any extra material that may be present. It is then chopped or shredded to change the harvested material to a fibrous material ready for sugar extraction. Several mills consisting of 3 rollers are rolled over the cane, with hot water being added. This process squeezes out the sugar, and the plant material, aka bagasse, is left over. After going through the rollers, the sugar is ready for the clarification step. the sugar is heated and lime juice is put into the mixture. After clarification, the sugar is boiled to evaporate out the water and concentrate the sugar into a heavy syrup ready for crystallization. The crystals are separated out of the remaining liquid, which is molasses. Then the crystals are dried and stored and can then go on to the refining process.

The laborers wait at the designated place for the luna. Then they walk to the fields.
It's time to wake up. The women prepare the breakfast and lunch while the men tend to house duties.
The work conditions on the plantations were harsh. They had to wear layers of thick clothing that takes about 30 minutes to put on. There is very intensive labor into the process of making sugar. They work about 10 hours a day and don't get paid very much. They get paid based on their race and gender.
