At first the sarcophagus was flat and plain so the Egyptians over time put a mask of a pharaoh over the top. It was mainly for decoration, but it was also a symbol that a very important pharaoh's body was laying there.
When a pharaoh dies he is buried with valuable things that they might need in the afterlife. If they use a sarcophagus then they are able to keep their precious objects with them. A sarcophagus also secures the body after the mummification process.
