  • 1 cup flour
  • 1 cup wheat germ
  • 1/2 teaspoon cinnamon
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 1 egg
  • 2/3 cup milk
  • 1/4 cup corn oil
  • 1 cup apples (Macintosh), chopped

Preheat oven to 400 degrees. Generously grease muffin pan.

In large bowl, mix dry ingredients together and set aside. In separate bowl, mix thoroughly the remaining ingredients including the apples. Then pour the liquid ingredients into the dry ingredients. Mix until everything is moistened. Scoop into muffin tins and bake 15-25 minutes. Serve warm to people and cool to horses!

Horses are a big part of my life. In the fall, we ride almost every Sunday. I sing songs about my horse, Smoke, in a 4 year old mind set. I also chose this topic because as I looked at the requirements, i was mentally thinking,"I have this, already done," ect.

For the different genres, i chose a fairy tail, a scrapbook page, a recipe, and a poem. I chose all of these because I had all of these at hand except the fairy tail.

Pretty Boy loves me,

I like to stroke his soft ears,

Fairy Tale

HORSES

Once upon a time, in a land far, far away, where unicorns frolic in meadows, lived a young horse, named Smoke. He was a knight, courageous and handsome. He always wanted to do something impressive and big, like save the princess, Jessie, that he has always loved. She lived in the barn because her father was an evil leader, wanting to take over the world. One day, late at night, after the guard had fallen asleep, Smoke snuck into the barn and saved the princess! They fell in love and lived happily ever after in the woods! (frolicing with unicorns!)
