fat milk, no fat milk,

soithern milk, and

normal milk

Casein

Casein is the name of a family of related phosphoproteins (αS1, αS2, β, κ). They are commonly found in mammalian milk and make up about 80% of the proteins found in cow milk.

Casein Extraction

  • Groupings of casein known as micelles float around in the milk
  • These groupings have a negative charge which keeps them dispersed
  • When the milk becomes too acidic or when it goes sour, the negative charge on the micelles become neutralized
  • As a result, the casein begins to clump together
