SCOTLAND.

Porridge.

An historical Scottish breakfast is porridge and may occasionally be served as a starter :

The first thing you need is some oats. they take longer to cook but it’s worth the effort, and it will cook right down into a gorgeous smooth porridge.

The next key point is the dilution. One big mug of oats will serve four, and you’ll need three mugs of water . Get it all in a pan over a high heat and bring to a boil, then turn it right down to a low simmer.

An important thing is salt.

Porridge should cook for around 15 minutes, but it will start to go soft and stodgy after around 5 minutes, so you can start taste testing from then.

Haggis.

Haggis is a savoury pudding containing sheep's pluck; minced with onion, oatmeal, suet, spices, and salt, mixed with stock, traditionally encased in the animal's stomach though now often in an artificial casing instead.

It is believed that food similar to haggis, quickly cooked inside an animal's stomach, all available after a hunt, was eaten from ancient times.

Haggis is traditionally served with "neeps and tatties", boiled and mashed separately, and a dram (a glass of Scotch whisky), especially as the main course of a Burns supper.

In Ireland, as elsewhere, the exact constituents of a full breakfast vary, depending on geographical area, personal taste and cultural affiliation. Traditionally, the most common ingredients are bacon rashers, pork sausages, fried eggs, white pudding, black pudding, toast and fried tomato. Sauteed field mushrooms are also sometimes included.

FISH AND CHIPS.

In Ireland, the first fish and chips were sold by an Italian immigrant, Giuseppe Cervi, who mistakenly stepped off an America-bound ship at Cobh (then called Queenstown) in County Cork in the 1880s and walked all the way to Dublin. He started by selling fish and chips outside Dublin pubs from a handcart. He then found a permanent spot in Great Brunswick Street (now Pearse Street)..

COTTAGE PIE.

Cottage pie or shepherd's pie is a type of savory pie. It is made with minced meat, with mashed potato on top. It comes from the United Kingdom and Ireland. The dish is now popular worldwide.

The name "cottage pie" was first used at the end of the 18th century. It was around that time that the poorer people of Britain, people who lived in cottages in the country, started using potatoes as an everyday food. Originally, a pie made with any kind of meat and mashed potato was called a "cottage pie".

As in the rest of Britain and Ireland, the composition of a Full Welsh Breakfast can vary.

Modern alternatives to the traditional Full Breakfast will often develop the traditional seafood theme. Smoked fish such as Sea Trout or Sewin may be served accompanied with poached eggs.

Welsh folk were using wild cereals to create a coarse bread. By the time the Romans invaded, Celtic skills with bread had progressed to the point that white or brown breads could be produced. The Roman invasion led to many Welsh people moving to the less hospitable uplands, where the only cereal crops which could be grown were oats, barley and rye. Oat and barley breads were the main breads eaten in Wales up until the 19th century, with rye bread created for medicinal purposes. Oats were used to bulk out meat or meat and vegetable stews, also known as pottage.

WELSH CAKE.

A traditional full English breakfast includes bacon, eggs, fried or grilled tomatoes, fried mushrooms, fried bread or toast with butter, sausages, and baked beans.

Black pudding is often also included.

In the North Midlands, fried or grilled pancakes sometimes replace fried bread.

The food is traditionally served with a mug of tea; more recently coffee is an alternative.

Roast beef.

Welsh cakes are traditional in Wales. They have been popular since the late 19th Century with the addition of fat, sugar and dried fruit to a longer standing recipe for flat-bread baked on a griddle.

Welsh cakes are made from flour, sultanas, raisins, and/or currants, and may also include such spices as cinnamon and nutmeg. They are roughly circular.

Roast beef is a dish of beef which is roasted in an oven. Essentially prepared as a main meal, the leftovers can be and are often served within sandwiches.

In the United Kingdom, United States, Canada, Ireland, New Zealand and Australia, roast beef is one of the meats traditionally served at Sunday dinner, although it is also often served as a cold cut in delicatessen stores, usually in sandwitches.

Tea.

In the United Kingdom, the drinking of tea is so varied that it is quite hard to generalise.

While it is usually served with milk, it is not uncommon to drink it black or with lemon, with sugar being a popular addition to any of the above.

Strong tea, served in mug with milk and sugar, is a popular combination known as builder's tea.
