- Contains a non-protein portion
- non-protein portion known as the "prosthetic group" or the "cofactor"
- Soluble in 70-80% alcohol
- Found ONLY in PLANT material
- Plant storage proteins containing high GLUTAMINE and PROLINE content
- Protein + Phosphate
- Phosphate group regulates protein function
