Sodium Nitrate

Who Created NaNO3?

Who

  • Although there is no evidence of who created Sodium Nitrate, it was discovered in the 1850s in Chile
  • In 1919, Ralph Walter Graystone Wyckoff determined its crystal structure using X-ray crystallography.
  • Manufacture - CJ CHEMICALS

Sodium Nitrate

What

  • Also known as Chile saltpeter
  • Chemical Formula - NaNO3

Physical Properties

  • white crystalline solid with a
  • density of 2.26 g/mL or 2.26gram per milliliter
  • melting point of 308 °C.

Chemical Properties

- strong acid, dissociates completely in water, is a strong oxidizer and flammable materials.

Chemical Properties

Important Dates

When

  • South American saltpeter became a profitable business in 1859
  • Approved by the FDA in Mar. 15, 1977 (TITLE 21--FOOD AND DRUGS, Chapter 172)
  • In the 20th century food manufacturers discovered that sodium nitrate reacts with the bacteria found in meat to form sodium nitrite.

Where

Why is it used? Why do we keep using it?

  • Sodium nitrate is used to preserve the food and to prolong the shelf life,
  • Also used to prevent early spoilage from bacterial growth.
  • Used to preserve foods, mainly meat and fish
  • Sodium nitrate is a natural part of any diet

Why

How can it affect you?

  • Swallowing high concentrations of sodium nitrate can cause severe abdominal pain, diarrhea and nausea.
  • High levels consumption of sodium nitrate can cause heart disease, colon cancer, leukemia, and other forms of cancer

How

Colon Cancer

  • Cancer that begins in the last part of the digestive tract-colon, he exact cause of colon cancer is not completely understood, but most colon cancers are believed to arise from polyps.
  • A colon polyp is a small clump of cells that forms on the lining of the colon.

SYMPTOMS -

  • Diarrhea
  • Constipation
  • Fatigue
  • Unexplained weight loss
  • Abdominal pain

Prevention -

  • Screening for people older than 50 years and those with a family history of colon cancer
  • Drinking alcohol in moderation
  • Healthy eating- fruits and vegetables
  • Quit smoking
  • Exercise regularly

TREATMENT - Three primary options for treatment are radiation, chemotherapy and surgery.

Solutions/Alternatives

  • An easy way to avoid excessive sodium nitrate intake is to limit how much cured meat is in your diet.
  • This can help you avoid the risk of high blood pressure, heart disease, cancer.
  • A common substitute for sodium nitrite is celery juice, which contains antioxidants.
  • Antioxidants may help protect your cells which can play a role in the prevention of heart disease, cancer, and the aging process.
  • Sodium nitrite can not be used in any product labeled organic.

Conclusion

My advice would to eat more organic and naturally persevere food. Moreover to eat more fruits and vegetables to balance out your consumption of sodium nitrate when eating meat, or fish. Lastly to start reading the label on any product, to know what chemicals your putting into your body.
