What is sensory evaluation?

defining sensory evaluation

an "inexact science" which uses a human individual as an instrument to perceive and react to characteristics of a product

Useful for:

Uses

  • defining flavor profiles
  • ensuring product consistency
  • monitoring quality concerns
  • evaluating impact of process or ingredient changes
  • product development trials
  • industry education

Not all tasters are created equally!

Did you drink coffee or eat right before coming to panel?

Are you over the age of 50?

"Inexact Science"

Are you fatigued by the number of samples already tasted?

Do you have a sweet tooth or eat a lot of spicy foods?

Is your palette trained?

More than just merely tasting!

Components

  • bitter, sweet, salty, sour, umami
  • aroma is most sensitive perception
  • trigeminal components: sensations of 'intensity'
  • temperature also plays a role

Goal is for a specific compound to be:

Start with easily perceived flavors... 3x their normal 'threshold' concentration.

Slowly lower the concentration of those flavors over subsequent tastings.

Training Structure

Repeatedly introduce the flavor at its threshold concentration.
