Which items are raw items?

Raw items are fresh items that have yet to be cooked.

Think fresh chicken, beef, pork, fish, etc.

What is Bacterial Cross-Contamination?

Cross contamination is the process by which bacteria or other microorganisms are unintentionally transferred from one item to another, with harmful effects.

Example: You store raw chicken right next to a fresh sandwich. Salmonella from the chicken gets on to the sandwich, which your customer then eats. Your customer gets poisoned by the salmonella and ends up in hospital.

Pretty bad, isn't it?

Why Separate Items?

Separating Items

Raw meat must be separated from other items to avoid bacterial cross-contamination. This is a salmonella-free zone!

Separating your items not only stops your customer from getting sick (good), but it also gives them confidence in your skills and can help increase your tip potential (also good)!

Tips for separating items

  • Always inspect raw meat items and ensure that there is no damage to the packaging.

  • Use clear bags from the produce section for an extra layer of protection between raw items and other items in your fridge bag.
