- Fat is cut-in (butter/margarine, shortening/lard).
- Fat is mixed with the dry ingredients before the liquid ingredients are added.
Muffin Method vs. Biscuit Method
- Wet ingredients: liquids and fat (oil or melted butter).
- Make a well in dry ingredients.
- Wet is added in well.
- Mixed dry ingredients are combined with the liquid ingredients.
