Biscuit Method

  • Mixing Methods.
  • Mixed until moist.
  • Adds wet.
  • Fat is cut-in (butter/margarine, shortening/lard).
  • Fat is mixed with the dry ingredients before the liquid ingredients are added.

Muffin Method vs. Biscuit Method

  • Wet ingredients: liquids and fat (oil or melted butter).
  • Make a well in dry ingredients.
  • Wet is added in well.
  • Mixed dry ingredients are combined with the liquid ingredients.
