- hydroxyl is a part of the biomolecules alcohols (like ethanol) and sugars (like glucose and fructose)
- these substances dissolve in water by forming bonds
Properties of the Hydroxyl group
- oxygen atom is more electronegative than hydrogen atom, so it attracts electrons
- hydroxyl group is polar
- this results in hydroxyl group being capable of forming hydrogen bonds
- because all alcohols contain hydroxyl, they will almost always disolve in water by forming hydrogen bonds
- this makes them a hydrophilic substance
