Homemade Biscuits

Prep Time: 20 min.

Bake Time: 10 min.

Yield: 12-16 Biscuits

Preheat oven: 450˚F

Ingredients:

3 cups all-purpose flour

4 tsp. baking powder

1 Tbsp. sugar

¾ tsp. cream of tarter

1 tsp. salt

¾ cup of butter

1 cup milk

1 T. butter for melting

Directions:

1. In a large bowl stir together all dry ingredients. Next add ¾ c. butter to dry mixture, using a pastry blender, cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Make a well in the center of the course crumb mixture then add milk all at once. Using a metal fork, stir until entire mixture is moistened.

2. Lightly flour the counter top. Turn dough out onto the floured surface. Flour hands then gently knead the dough by folding and pressing, then rotate dough a turn and knead again repeat three times. Pat or lightly roll dough (using a rolling pin) until 1-2 inch thick. Cut biscuits out of dough using biscuit cutter (approximately 3 inches).

3. Using a pastry brush lightly brush with melted butter.

4. Place biscuits one inch apart on an ungreased cookie sheet. Bake in 450˚F oven on the center rack for 10-12 min. or until golden brown.

Please Remember:

• Cut out as many biscuits as possible from a single rolling of the dough because a second rolling (and the added flour) will result in biscuits that are a bit tougher than the first batch.

• Flour your hands, biscuit cutter (reflour after each cutting) and any surface the dough will touch otherwise the dough will stick.

The yield of a recipe can be defined as

how many servings the recipe will produce.

If the yield = 6 that means it will make a total of 6 servings. A serving size could vary depending on the type of food.

Numbering the steps helps people stay on track and not skip any steps.

All recipes have steps for how to prepare the food. The steps need to be listed in the order they should be completed.

Time and temperature: some recipes give exact cooking time and temperatures such as "bake at 315 degrees for 40 minutes"

Other recipes may tell you how to cook the food. For instance, "heat the liquid until it simmers."

Some have a mixture of both!

If specific cooking techniques are needed it would be listed in this section, such as: "saute' or blanch" the vegetables before adding.

The ingredients are listed with the exact amount that is needed.

Ingredients should be listed in the order they appear in the recipe in order to prevent leaving out any ingredients.

Nutrition Facts: Not all recipes have this but it is becoming more popular everyday. The information, if listed, is usually based on one serving of the completed dish.

Tips or special instructions: may be listed separately at the bottom, otherwise, it will be listed within the step by step directions.

The specific form of the ingredient is also stated. For instance, if fresh basil is required it will specifically state "fresh basil". You should not use dry basil if fresh basil is listed as the ingredient.

Equipment List: Not all recipes specify the proper or recommended equipment in a separate list. Recipes that do specify size and type usually say things like "In a 9 x 13 ungreased baking pan" or "in a cupcake pan" or "in a medium size frying pan" and this is usually found mixed in with the step by step directions.

Food will have different characteristics when cooked in improper containers so it is important to pay attention to this information.

Example: cooking brownies in the wrong size pan may result in burned brownies.
