Seaweed in Ice Cream?

Where is the seaweed harvested?

Seaweeds are usually harvested manually by fishermen in low depths at low tides or by diving using appropriate equipment. After being harvested, seaweeds are placed under the sun to dry until they reach a humidity level that is ideal for processing.

Why do they use seaweed in ice cream?

Since seaweed lives in the sea, the gum made from it loves water. This is

why it is used in ice cream. The gum, even in small amounts, ties up the

water in the ice cream, making it thick and smooth instead of thin and

runny. It also keeps the water from forming ice when it sits in your

freezer.

The uses of carrageenan are concentrated in the food industry. Carrageenan applications are generally divided into milk based systems, water based systems and beverages. Carrageenan is in most milk products like ice cream, chocolate milk, and pudding.

Ice cream is not actually made with seaweed as a ingredient. What's inside the ice cream is a gum extracted from the seaweed, called carrageenan. Carrageenan is obtained from several kinds and the species of seaweeds belonging to the Rodophyceae class.
