Control calitatii produselor consta intr-un ansamblu de operatii prin care se verifica in ce masura caracteristicile de calitate ale produlelor corespund prescriptiilor standardelor.
Controlul se realizeaza prin metode organoleptice si de laborator. Metode organoleptice Metode organoleptice Metode organoleptice Metode experimentale Metode experimentale Se bazeaza pe utilizarea celor cinci simturi si dau informatii referitoare la:
aspect,
culoare,
gust,
miros,
consistenta. Au caracter subiectiv deoarece depind de acuratetea simturilor operatorilor, de experienta acestora si de conditiile de desfasurare. Prezinta avantajul economicitatii si rapiditatii. Constau in determinarea cu ajutorul unor aparate, instrumente, mijloace de masurare a caracteristicilor fizice, chimice, mecanice, optice, termice. Au un mare grad de obiectivitate si precizie , deoarece au la baza experimente desfasurate in conditii optime de mediu si pe baza unor proceduri prevazute in standarde.
