Stainless steel rust,.corrosion and stains more than other steel alloys: however, it is not lterally "stainless" Hard, durable metal . It does not rust or discolor. Stainless steel also will not transfer, or pass to foods, a metallic taste. The main drawback is that it is hard to sharpen.

is a knife with a blade composed of glass. The cutting edge of a glass knife is formed from a fracture line, and is extremely sharp.Glass knives were used in antiquity due to their natural sharpness and the ease with which they could be manufactureda. The glass used typically starts out as 1-inch-wide (25 mm) strips of 1⁄4-inch-thick (6.4 mm) plate glass, which is cut into 1 inch (2.5 cm) squares. The glass square is then scored across the diagonal with a steel or tungsten carbide glass-cutting wheel to determine where the square will break, and pressure is then applied gradually across the opposite diagonal until the square breaks. This technique provides two usable knife edges, one on each of the two resulting triangles. The better the break is aligned with the diagonal, the better the cutting edge.

These products are made from high quality Zirconia materials which are first tested to ensure they meet the quality standards. This material is less susceptible to rusting and is more durable as compared to the metal knives. In order to enhance usability and efficiency, manufacturers incorporate a handle on the knife so as to enhance users grip and comfort. Due to their high quality they are a little bit expensive but this is just a small price to pay considering the long terms benefits that can be derived from them.

An alloy of Iron and Carbon, high carbon steel is slightly harder than stainless steel. This allows a blade to stay sharp longer and hold up much better under abuse. Consequently, high carbon steel blades are more difficult to sharpen.
