Before you begin, think about:
Protecting: Are the ipads protected? If not you may prefer to work on the floor.
Charging: Check the battery status before starting your activity. Think about how you are going to charge the ipad if the battery runs out in the middle of the session.
Labeling and assigning devices: Not absolutely necessary with Open Apps but advisable. You may want to assign the ipads according to the level of difficulty you have preset.
Finally: Will you be connecting the ipads to the whiteboard? Double check the wifi connection is good enough, have a physical (cable) connection as backup.

Just because there are books in the classroom, that doesn't mean kids will learn to enjoy reading or to choose their reading material wisely. It's not enough to use technology, you have to use it well.
DON'T's:
*Technology should not be used as simply a digital worksheet.
*Technology should not be used as a way to keep students occupied.
*Technology should not be used to do what can be done without it.
DO's:
*Technology should be for accessing what was inaccessible.
*Technology should improve learning outcomes, not distract from the content.
*Technology should provide our students with social, active and problem-based learning experiences.
No interactivity teacher-student: The student interacts with the app, the teacher can follow (or not) his progress but she is not in control of the pace. eg. all of the above

Teacher-student interactivity: The app hasn't got a definite purpose. The teacher creates the activity that will take place on the ipad and she is in charge of its pace. eg. Nearpod.

Assigned Apps: User profiles can be created for student. The games build on the students performance. Sometimes specific skills can be assigned for each student and data can be collected of the students performance as well as. Eg. Eggy Alphabet (optional web subscription)
apps - multiplayer
Multi-Player: There are only a few apps with this capability as of now. These Apps allow multiple students to play at the same time. An example of this type of App would be Counting Together.
apps - open
Open Apps: Start from the beginning or where the last student using it left off. Students can not be specifically assigned to the app. The only data that can be collected is for the groups of students who are assigned to that specific iPad.
eg. LetterSchool
Subject specific: The app has been developed to practise either maths or phonics (or sometimes both), etc. It's a "closed" app that you will be able to use only for its original purpose. eg. Teach Me Kindergarten; Eggy Phonics; etc.

General tools: The app hasn't got a definite purpose. You can use it to work any aspect of your class you may be interested in. These are highly creative tools both for the teacher as for the student. eg. Scribblepress; Doodlebuddy; First Camera; etc.
