The words that are capitalized are used to put emphasis on the contrast between what we are afraid of (Ghost, Chambers, Abbey Gallops) and what we should be afraid (Brain, Body, More). It's used to deliver Dickinson's warning message.
Double Dash
1. There is an evil inside you that you may be unaware of but is substantially more frightening than any material or superficial threat. Essentially the inner you is what you should really be afraid of.
Used to emphasize certain phrases and ideas, and also used to separate thoughts. For example "Far safer, through an Abbey Gallop, The Stones a'chase -- Than Unarmed, one's a self encounter" This dash contributes to the contrast between a literal and physical ghost and a ghost in one's mind, separating the two ideas

Whether it's a guilty conscious or a part of them they don't like, they put on a facade or front to hide it but it haunts them in their mind. Essentially you are haunted by your past or haunted by the lies you keep.
