Imitation Crab is made from Surumi: a paste
made from a blend of various types white fish.
Imitation
Surimi's purpose is to replicate crab meat and sometimes other expensive seafood
for a cheaper alternative by adding dyes, flavoring additives and shaping it.
Artificial Crab; Fake Crab; Imitation Crab or Crab-flavored
The label must clearly show the consumer that the product is not real crab meat.

Real
A lot of sodium is added into Imitation crab meat due to it's initial lack of flavor.
High sodium intake increases risks of hypertension and cardiovascular diseases.
- More economical transportation as surimi is more compact than fresh fish.
- Freezer shelf life of 2 years on average
- Health bonus as it contains less calories from fat than regular crab.
- The fish used in imitation crab surimi is abundant and inexpensive to process, therefore more sustainable in terms of maintaining diversity in the oceans.
