LACTO-VEGETARIAN What is a Lacto-Vegetarian? Let me tell you A lacto vegetarian diet is a vegetarian diet that includes dairy products such as milk, cheese, yogurt, butter and cream, but excludes eggs and meats from animals. so why cant they eat eggs & meat? The main reasons why lacto vegetarians do not consume meats and eggs are because they believe that all living beings are equally valued. Also because some believe that one’s personality is affected by the kind of food someone consumes, and eating flesh is considered bad for ones spiritual and mental well being. Life Cylcle & Lifestyle Needs 17 Year old girl Named Nicole (Adolescent) Nicole is a 17 year old girl which makes her a adolescent. As a adolescent she requires a diet rich in calcuim, vitamins, zinc and fibre. However she is a lacto-vegetarian therefore she cannot eat foods that contain eggs and meats from animals and these all are sources that are high in protein, which is what a growing teenagers requries. Therefore i have designed a whole meal poppy seed bread which will suite Nicoles lifestyle needs. My Bread was originally a "poppy seed" bread, however i have modified it to a whole meal poppy seed bread. Whole meal has many benefical factors which a growing female teenager requries. They are high levels of manganese, dietary fibre, tryptophan and magnesium, these are all important sources that Nicole requires in her every day lifestyle because she is a Lacto-Vegetarian. Not only does wholemeal provide growing Adolescents with dietary fibre and magnesuim it also contains extra vitamins, like Vitamin B1 (Thiamine), Vitamin B2 (Riboflavin), Vitamin B3 (Niacin) and Vitamin B5 (Pantothenic Acid). These are vital sources that are essential for a growing teenager who is a lacto-vegetarian. Therefore one of my modifications have not only provided nutritional benefits but have also meet Nicoles requirments and needs. Not only has the wholemeal modification meet Nicole's Nutritional and dietary requirements but also my second modification has as well. My original recipe had asked for a egg however because Nicole is a lacto-vegetarian and cannot consume egg i have replaced the egg with Silken Tofu. Silken tofu has many beneficial factors and it also helps and acts as a rasing agent. It is made by coagulating soy milk and then pressing the resulting curds into soft white blocks. Tofu is a excellent source for vegetarians as it provides little amount of calories, large amount of iron, calcuim and protein. Nicole cannot consume eggs therefore i have replaced the egg with silken tofu which meets her dietary requirments and tofu is said to be even better than eggs because egg yolk isnt as healthy as egg white, however tofu as a whole is much more beneficial as it has no fat, and is high in calcuim, iron and protein which is what a growing female teenager requires. Therefore both my modifications (wholemeal flour & tofu) are beneficial, healthy and also they both meet Nicoles dietary requirments. Nutritional Analysis My "Designer Bread" has meet Nicoles
dietary & nutritional needs. It has no
meats from any animals or any eggs or
meat substances. It is healthy for a
female adolescent and it provides her with
heathly sources of fibre, zinc, protein and
calcuim which is what a growing teenager needs. "Designer Bread"
Portfolio Food Calculator PMI on my "designer bread" The good things about my modified bread is that it is really simple and quick to whip up it doesn’t take much time to make and requires little technique. Also because it is wholemeal it is much more nutritious and healthier for a 17 year old girl who is a Lacto-vegetarian.
Wholemeal bread provides iron, zinc, phosphorus and magnesium; these are all excellent sources for the body of an adolescent. Iron helps red blood cells carry oxygen to all parts of the body. Almost two-thirds of the iron in your body is found in hemoglobin, the protein in red blood cells that carries oxygen to your body’s tissues. Also Magnesium helps muscles and nerves function, steadies the heart rhythm, and keeps bones strong. It also helps the body create energy and make proteins, this is even more important for a young female teenager it provides her with energy and helps maintain muscle and nerve functioning properly. Phosphorus helps form healthy bones and teeth. It also helps the body make energy; this is another important factor for an adolescent. Zinc is important for normal growth, sexual development, strong immunity, and wound healing. Zinc is necessary for protein synthesis and the metabolism of Vitamin A. Zinc also helps the healing process of internal and external wounds, decreases cholesterol deposits and promotes mental awareness. These all are excellent and important sources of energy and also muscle development, therefore wholemeal bread is a great source of nutrition and provides and promotes muscle development for a 17 year old girl who is lacto-vegetarian. Another good thing about my “designer bread is that it contains poppy seeds. Poppy seeds are a plant derived chemical compound that is known to have anti-oxidant, disease preventing and health promoting properties. Poppy seeds contain fatty acids and essential volatile oils. Poppy seeds are especially high in oleic and linoleum acids. They contain about 50% of oil. Oleic acid, a mono-unsaturated fatty acid, helps lower LDL or "bad cholesterol" and increase HDL or "good cholesterol". They are an excellent source of B-complex vitamins such as thiamine, pantothenic acid, pyridoxine, riboflavin, niacin, and folic acid; many of these functions are co-factors in substrate metabolism. They also contain good levels of minerals like iron, copper, calcium, potassium, manganese, zinc and magnesium. They are even better for a young female teenager who is a lacto-vegetarian as they regulate growth and development and also controls the cell and body fluids that help control heart rate and blood pressure. Also because my customer is a lacto-vegetarian that cannot consume egg, so I have replaced the egg with Silken Tofu. Tofu is soya bean and is an excellent source of dietary fiber and protein. It is rich in vitamin B6- important in building amino acids and in the formation of neurotransmitters. Also soy is often recommended as an alternative for meat in low-fat diets and egg.
Even though there are good things about my “designer bread” there are also some minus.
Poppy seeds are a great source of nutrients and are great for the body; however they contain Morphine and Codeine and can cause false positives for Opiates in urine tests. This could affect a person if they want to participate in sporting event – for example an athlete is tested positive for morphine and codeine because they have consumed poppy seed bread or bagel the athlete may not be able to participate in their sporing event; this could be one minus. Also another minus about my designer bread may be that because I have substituted egg with tofu it could affect some people. Tofu is soy bean and soy bean can have numerous effects on people and how their bodies function. People with a soy allergy can suffer from hives, diarrhea and breathing difficulties. This is another minus and many people have to be mindful of what they consume to prevent these symptoms from occurring. My “designer bread” has many positives and also a few negatives but it also has some interesting aspects. Poppy seeds have a unique flavor and also an interesting texture when biting into poppy seed bread it has such interesting texture because it is so crisp and crunchy. Another interesting aspect about my bread is that the egg is substituted from silken tofu which gives the bread a thicker texture and some people would never really even think of using silken tofu as a egg replacer.
Therefore my whole meal poppy seed bread has many positives that are a great health benefit, however also some negatives that many people need to be careful of, and it also has a few interesting aspects which give the bread great texture and creativity. Where & How

Another reference that i used in my portfolio is the internet. These websites were very useful and helpful as they provided me with facts and information about my core ingredients that i used in my bread. Another source that i used in my portfolio is the RECIPE PLUS magazine, it provided me with ideas and tips about which breads to eat and the magazine stated that whole wheat is the best and also prevents cancer.
