Caraga Region DELICACIES Cubes of kesong puti, made from carabao milk, are often used as topping. Traditionally, the rice cake is baked in clay ovens with glowing charcoal under and above the cake SPECIAL BIBINGKA GALAPONG UBE BIKO TIKOY WITH LATIK CASSAVA BUKO Glutinous rice soaked in water then ground with the water to form either a batter or a dough, depending on what the cooked dish is supposed to be. This is a twist of the regular biko (called suman in Iloilo) cooked in gata and brown sugar. It is the first extract from freshly grated mature coconut. It is made from grated cassava (Kamoteng Kahoy) mixed with coconut milk, eggs, butter and topped with a creamy milk mixture.
