Couper en Mirepoix c'est quoi ?
Coupe en mirepoix :
- couper les carottes dans le sens de la longueur, en trois ou en quatre (selon le diamètre des carottes)
- couper en dés d'environ un centimètre

Cette coupe est à la base de nombreuses sauces. Par exemple, vingt minutes avant la fin de la cuisson d'un poulet rôti, rajouter une mirepoix de carottes et une mirepoix d'oignon, puis diluer avec un peu d'eau une fois les légumes revenus.

Coupe en paysanne :
- couper les carottes dans le sens de la longueur, en trois ou en quatre (selon le diamètre des carottes)
- couper des lamelles très fines
Cette coupe très fine est très utilisée notamment pour les potages à cuisson rapide.
