Love is the Birthday present that is being given to the narrator.

What does this have to do with a Birthday?
A Singing bird represents cheerfulness and joy.
What does this have to do with a Birthday?
An apple tree represents the bearing of fresh,ripe fruit.
An apple tree also represents branches containing a present of sweetness
What does this have to do with a Birthday?

A rainbow represents the feeling of being full of excitement. A shell represents a birthday present because you don't know what is under the shell 'wrapping'.

What does this mean?
This is a metaphor because peacock do not actually have one hundred eyes. 'One hundred eyes' is actually representing the peacocks tail feathers. The peacock metaphorically refers to grace in a peacocks' walk and beauty of the many vibrant peacock colors.
