Serve on a bed of rice or mixed with noodles Chinese cuisine combines meat or tofu with sauces like soy or oyster. The addition of green Chinese vegetables and seasonings like garlic and ginger will have your taste buds tingling (Real Simple, 2015).

Although the Chinese migrated to Australia during the gold rushes of the mid-1800s, they did not manage to change the eating habits of Australians at that time however Asian food is much in demand today (Start a New Life in Australia, n.d.).

Introduction to Australia
Italian immigration started in 1870 (Olver from Hayes, n.d) but it wasn’t until the 1920s numbers started to grow. Becoming the largest non-English speaking group, Italians were able to hold onto their culinary heritage and introduce it to Australia having a large effect on what we eat today (Olver from Dyson, n.d.).
A Popular Dish
Italian food has become so ubiquitous in the Australian mind that it is hardly is even seen to be Italian anymore. Who would think of every bodies favourite...Pizza as an Italian dish. Traditional margherita, super supreme or newer 'gourmet' styles. We have truly taken this Italian dish and made it our own.

The keystones of Italian cooking are olive oil, tomato, parmesan cheese and basil (Italian Pantry, 2015). Italian cuisine relies on the freshest ingredients cooked on the spot, combining vegetables, grains, fruits, seafood, fish and meat (Italy Bit by Bite, n.d.).

Loukoumades are fried dough balls much like doughnuts, and are drizzled in a sugar syrup or honey (Vallas, n.d.). They are sometimes referred to as Honey Puffs and
are much sort after during Brisbane’s Paniyiri Festival (Paniyiri Greek Festival, 2015).

One cultural food celebration that stands out for the Greek Community in Brisbane is Paniyiri. Every year over 50 000 people flock to the Annual Paniyiri Greek Festival to dance, sing and eat (Paniyiri Greek Festival, 2015).

Thai fish cakes are full of flavour. This delicious snack is made with fish, mixed with curry and fish paste, beans, basil and lime leaves, eggs, fish sauce, and sugar. Fried then served with a cucumber dipping sauce. (Silpachai, 2013)

The French are not only well known for their beautifully rich food but also their delicacy ingredients. Foie gras is fattened up duck or goose liver, frogs legs, and snails are just a few of their unusual ingredients (Bayley,2014) (Wikipedia, 2015).

In the Thai language “Thong” means Gold. Any desserts beginning with Thong are served with a blessing for success and prosperity for the giver of the gift and the recipient (Thai Desserts Boutique, n.d.).
French food is famous for its flavour. French onion soup is a traditional soup made from beef stock and onions. It is the caramelised onions that give it its distinct rich flavour (Top 10 French foods – with recipes, 2013).
Chinese New Year is celebrated for first 15 days of the Chinese calendar. A reunion banquet is held with family coming together to share a traditional meal consisting of a range of dishes including dumplings, New Year cake and fish (Chinesenewyears.info, 2015).

It took the repealing of the Immigration Restriction Act in 1973 for substantial numbers of Thai nationals to establish in Australia. During the 1980’s Australia was presented with the taste sensation of Thai food (Symons, 2014).
For a popular Greek dish look no further than Moussaka. This hearty casserole is layered with eggplant and a spicy meat filling then topped off with a creamy béchamel sauce. Once golden it is ready to devour (Livanos Athan, n.d.).
Feeling royal? History says that creams puffs or profiteroles were first made in the 1500’s for Henry II of France. Choux pastry is filled with cream or custard then garnished with melted chocolate or dusted with powdered sugar (Punchbowl, Inc, 2015).
The Feast of Seven Fishes is celebrated with a seven course fish dinner. It originated in Medieval times when Catholics abstained from red meat. Sea foods such as cod, calamari, clam, lobster, octopus and crab are menu items (Phillips, n.d.).

Rice sautéed with minced ginger and garlic, tossed with vegetables and meats, with a garnish of spring onion is non-other than Chinese Fried Rice. It is a dish favoured around the world (Kwong, 2013).
'Piéce de résistance' has to be the decadent desserts the many regions has to offer. 'Tiramisu', a creamy mascarpone and coffee combo which translates 'pick me up' in Italian is a favourite (SBS, n.d.).
In the 1850's the Greek sailors came to Australia hearing of the gold rush, since then the Greeks have been finding settlement in Australia. As the gold diminished many of them sought occupation in cafes and shops (Origins, n.d.).
'Féte de la Gastronomie' is a festival dedicated to food and cooking, aiming to showcase treasured French cuisine to foodies and curious observes. This happens for three days in September (Foodfestival europe, 2015).
Popular Ingredients
The reason for the tantalizing taste is the fresh ingredients such as coriander, chillies, lemon grass, galangal, kaffir lime leaves, tumeric and garlic. Besides the taste they also offer medicinal properties for good health (Kovacs, n.d.).

Food, glorious food! Multiculturalism in Australia has allowed a wealth of international cuisine to become a staple in our homes. Rich and exotic flavours unlock the senses simultaneously, making meal times a sensory journey. Chinese, Thai, Greek, French and Italian cuisines are the essence of our flavour discovery. A glimpse of culture is reflected in each cuisine in the form of bustling food festivals, decadent desserts, exotic ingredients, a renowned dish and its journey down under. Bon Appetit!

Thai food has become vastly popular in recent years. You can find find a Thai Cultural & Food festival in every capital city. These are well worth attending for the cultural displays as well as a vast array of food stalls, letting you sample dishes to your hearts content.
As a Mediterranean cuisine it is highly seasonal. Fresh light summer dishes and warm hearty winter dishes. But what would Greek cooking be without olives, tomatoes and feta. Simply put together ingredients, turning into stunning dishes.
An indispensable item for the mid-autumn festival celebrations is the moon cake. Exchanged and shared with friends and family, it is a sweet pastry filled with red bean paste.

Conclusion
Throughout this short, but sweet, culinary journey we have explored five different cuisines that have bought us decadent desserts, renowned dishes, exotic ingredients, rich history and bustling food festivals. Multiculturalism has provided Australians with the opportunity to make international cuisine a staple at the family dinner table. The diversity of flavour discoveries has unified Australian’s hearts and stomachs to ensure international cuisine is a part of the Australian way of life. The accessibility of traditional recipes and ingredients ensure there is never a dull moment for a 'foodies' taste buds.

From the 1960's onwards French Cuisine began to become popular dining choice in Australia. Never a people to stay static, we have now evolved French fusion cooking in Australia. Influenced by the work of Metzger (2007) we measured the credibility and reliability of our online sources against her recommended criteria of accuracy, credibility, objectivity, currency and coverage. We considered what other sources validated the information, what the author’s qualifications were, how up to date the information was, was the information factual and how deep was the level of information on each resource (Metzger, 2007, p.2079). By applying Metzger's (2007) recommendations we were able to confidently produce this collaboration.
