This shrimp (Parastacus pugnax), is a regular inhabitant of semipantanosos lands denominated like fertile plains, in which it is possible to be found mainly in the central valley of Ñuble. Due to its great excavating capacity, this crustacean makes galleries of up to two meters in length, where several specimens coexist at the same time.

The collectors get up early to tour the surrounding land and use for this purpose a pipe with a handle that acts by sucking the water from the holes and that thanks to their expertise they are able to know if they are empty or bring one or more shrimp in each extraction. They can recognize by the sound of the water when extracting it from the cave of the shrimp if it contains or not specimens that inhabit it at that time.
