Isomerase
It is usually used to convert glucose syrup into fructose syrup. Fructose syrup is much sweeter than glucose, so it can be used in smaller amounts in slimming foods. This can save a lot of money.
Lipase
This is used with protease in biological detergents to break down the substances in stains into smaller, water soluble substances.
Carbohydrase
It used to convert starch syrup, which is relatively cheap, into sugar syrup, which is more valuable - for example, as an ingredient in sports drinks. It acts as a catalyst and makes the process much quicker.
Enzymes in Industry!!
Enzymes
Enzymes allows many industrial processes to occur in normal conditions. These decreases the energy, equipment and time.
Enzymes are also used at home. For example detergents.
Protease
This is used to pre-digest proteins during the manufacture of baby foods. This is why you would usually find baby food in liquid form, so that it is easier to digest as babies will not have developed teeth.
